My 2 Year Veganniversary + Cake Batter Smoothie Recipe

HAPPY 2 YEAR VEGANNIVERSARY...

TO ME!

July 14, 2014 was the day everything in my life would change without me even knowing it! I had already lost 25 pounds up to this point, but needed an extra boost. My friend Dani tagged me in an IG posts about a challenge, so I signed up. I signed up for a 21 day vegan challenge to hopefully lose a few extra pound since my weight loss had plateaued.

That challenge was the #21DaysToPlantBased challenge created by Queenie. Over the next 21 days, I cut out meat, dairy, eggs and most processed foods. Within 3 days, I lost 4 lbs! 😳 Queenie provided information on where to continue our research of a plant-based diet. One weekend, I binged on every food documentary available at the time. This probably wasn't the smartest thing to do for this emotional Piscean woman. I cried halfway through the first documentary, Forks Over Knives. I cried because I couldn't believe the damage I had done to my body over the last 30+ years. I cried because I knew food was the issue I suffered from being overweight, IBS, Anemia, and chronic joint pain. I cried because I didn't choose my diet, I was taught to eat an omnivorous diet. I cried because I was happy that I had the choice to change now! On day 11 of this challenge, I knew I couldn't go back to my old ways.

I used to suffer from IBS, anemia, and chronic joint pain in both of my knees. I was shocked to experience relief while eating only plants. My digestion was working properly and I was going daily! My knee pain subsided tremendously, and my iron levels went up naturally. My doctor even told me to stop taking my iron supplements (but I wasn't taking iron supplements! I just ate my greens daily 😊).

I felt invigorated, I felt energized, I felt euphoric! 💪🏾💪🏾💪🏾

Over the course of the #21DaysToPlantBased challenge, I:

+ Lost 11 pounds

+ Increased mental clarity & focus

+ Increased energy

+ Glowing smooth skin

+ Better endurance during workouts

+ Improved digestion [no more IBS]

+ More even keeled demeanor

+ Virtually no menstrual symptoms [when I was raw vegan especially]

+ Maintained weight loss easily

+ Cured Anemia

+ Discovered new foods I had never eaten before and started craving vegetables I used to hate, like mushrooms, avocado and tomatoes.

+ Became friends with some of the most amazing, compassionate people I've ever met.

After the #21DayToPlantBased challenge, I've adopted a high raw vegan diet and I've maintain my 50 pound weigh loss with ease. I've also discovered some amazing vegan food from all over the world. I love that I get to eat whatever I want, stay healthy, save the planet and do it with compassion! I also started my own raw vegan challenge to help others learn the benefit of a raw vegan diet. It's so cool to have been an inspiration for others to choose vegan. 💚

I want to take this moment to thank Queenetta 'Queenie' Moore for creating this challenge. I'm so thankful you did that juice cleanse three years ago! That was the beginning of a domino effect that is now saving lives! You've saved mine! Thank you so much for your effort to teach us about plant-based living. I love you and I'm so grateful for you! I'm so thankful to call you my friend and I'm so proud of your accomplishments in the Vegan arena! You're going to continue to shake things up and make a different in this world. You're saving lives daily, and I applaud you. I'm so inspired!

There's a few of us in this group that started together on July 14, 2014, and have stuck with this lifestyle since. Today, I celebrate you... I celebrate us! We made it! We can officially say we "been vegan for years!" 😊 So to celebrate today, I think we deserve a little cake... but since it's summer time and to preserve our hot vegan bikini bodies, here's a fun healthy smoothie to celebrate with. Cake Batter Smoothie

Ingredients:

+ 1 cup almond milk

+ 1 banana

+ 1/2 cup ice

+ 1 teaspoon organic and raw agave or maple syrup

+ 1/2 teaspoon pure vanilla extract

+ 1 scoop vanilla protein powder

+ 1 scoop flaxseed

+ sprinkles optional

Instructions:

add everything except sprinkles to a high speed blender until smooth. Pour into your favorite glass and top with sprinkles. Enjoy!
