Today is our favorite day of the week... MEATLESS MONDAYS! We're always experimenting with new flavors and recipes, and this week, we have a tasty one for you! Imagine eating your favorite pesto pasta guilt-free!
Our RAWSOME Basil Pesto Zoodles recipe lets you do just that.

Ingredients:
4-5 large zucchinis
1 cup basil
1 cup spinach
4 roma tomatoes, diced
1/4 cup pine nuts
1/4 avocado (for my avocado lovers, add more... i won't tell!)
2-3 garlic cloves
the juice of 1 lemon
Kitchen Essentials:
Cutting board
Knife
Food Processor or High-Speed blender
Spiralizer
Instructions:
Wash all produce before preparing this meal. Using your spiralizer, make zucchini noodles. There will be a core left behind; put that in your food processor or blender. Set the noodles aside. Add basil, spinach, pine nuts, avocado, garlic, and lemon juice to your food processor or blender. Blend until smooth. Pour mixture on top of the zucchini noodles and toss. Garnish with the diced tomatoes.
Yields 2 servings. Store in sealed glass container for no longer than 24 hours. Best consumed immediately.
