Pesto Pasta with Spinach + Sundried Tomatoes

Here we are again with a quick and easy rawsome recipe! Today we're making homemade pesto sauce and adding veggies and noodles to create a fun meal that adults and kids will love. Recipe below.

Pesto Pasta with Spinach + Sundried Tomatoes

Ingredients:

+ 2 Cups Fresh Basil

+ 1 - 2 Garlic Cloves

+ 1/4 Cup Olive Oil

+ 1/2 Onion - sliced

+ 1/2 Cup Sundried Tomatoes

+ 2 Cups Spinach

+ 1 Cup elbow noodles

+ Pink Himalayan Salt

+ Black Pepper

optional

+ 1 Cup Mushrooms

Instructions:

In a food processor or blender, add basil, garlic and olive oil and pulse until all ingredients are fully combined. Add salt & pepper to taste. Then set aside. Heat olive oil in a pan on medium heat. Add onion and sauté. Add mushrooms if you choose and sauté. Add sundried tomatoes and spinach then cooked down until spinach is wilted. Add pesto sauce and stir. Remove from heat. Toss noodles with sauce and enjoy!
