Celebrate by eating at least one meal without meat. Here's a quick recipe you can do that is not only meat-free, but also dairy and egg free + 100% raw!
This alfredo sauce will make you forget this meal is raw and good for you! You and your dinner guests won't be disappointed.

Raw Vegan Alfredo Pasta Ingredients:
4 Zucchinis • 2 cups Spinach • 1 Red Bell Pepper • 1 cup Cashews, soaked • 1/4 cup Pine Nuts • Juice of 1 Lemon • 2 Garlic Cloves • Salt & Pepper, to taste
Directions:
Pasta - Spiralize the zucchini, thinly slice bell pepper & spinach, toss with zucchini & marinate with the juice of 1/2 Lemon.
Sauce - Drain cashews. Add to blender or food processor with pine nuts, juice of 1/2 lemon, garlic cloves, and zucchini cores [what's left after spializing the zucchini] until smooth. Add water for a thinner texture, if desired. Pour over pasta and toss. Enjoy!
