✨ Vegan Holiday Bowl ✨
Cornbread: Pamela Non-Dairy Cornbread mix • made according to direction except I replaced the eggs with flaxseed eggs (1 tbsp flaxseeds, 3 tbsp water). I also had to bake it an extra 10 minutes because 25 wasn't enough to get it right. ✨ Roasted Sweet Potato w/ a Rosemary Maple Glaze: • Cube sweet potatoes • Mix a little maple syrup, olive oil, salt, pepper and fresh or dried rosemary together • Toss mixture with sweet potatoes • Bake at 375 for 15 minutes. Turn halfway sweet potatoes halfway through the time. ✨ Roasted Veggies (Asparagus, Broccoli, Brussel Sprouts, & Carrots) • Chop Veggies • Toss with olive oil, fresh or dried sage, salt, pepper • Bake at 375 for 20 minutes ✨ Sautéed Kale • De-stem the kale and cut (or tear) into smaller pieces • Chop garlic and slice red onion • Heat olive oil (or oil of your choice) in a skillet • Add garlic then red onion • Once the garlic and red onion become aromatic, add the kale • Add a little water to the skillet to steam the kale • Season with salt & pepper, to taste • Cook down to desired tenderness ✨ Cranberry Orange Relish: • In a sauce pan, add a 1/2 cup of water • Add 1 small bag of cranberries, the zest of one orange, the juice of one orange, 1/2 cup of sugar, garlic and cloves • Tip: stick the cloves in the ginger so they don't get lost in your relish • Bring to a low bowl then let cook until cranberries are tender • Remove the piece of ginger with the cloves before serving ✨ Rosemary Gravy: • Start by making a rue with vegan butter and spelt flour (or any flour your prefer) • Once combined, add a vegetable broth • Add salt and pepper, to taste • Add fresh or dried rosemary •Simmer on low for 5 minutes ✨ Build Your Bowl: • Add all of your yummy veggie sides to a bowl, drizzle with gravy and garnish with cranberry relish and enjoy! ✨ Happy Holidays from Rawsome Rawkstar! 💚 ✨ YOUTUBE 📺 https://youtu.be/XXgqDjo5mKg ✨ ---- ALWAYS SOAK YOUR PRODUCE FOR AT LEAST 20 MINUTES BEFORE CONSUMING TO REMOVE DIRT AND HARMFUL PESTICIDES.
